Dear J,
So tomorrow, we're having a gospel tea fellowship, so I decided to make scones! It reminded me of a recipe I used a couple years ago. These are really easy to make and it's gluten-free! However, I'm not making this currently, will post the recipe I use this time later.
And who doesn't like scones with their tea? ;)
Makes 16 scones.
2 1/2 c. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
1/3 c. grape seed oil
1/4 c. agave nectar
2 eggs
1 cup coarsely chopped dark chocolate
Directions: Preheat the oven to 350 F
In large bow, combine the almond flour, salt, and baking soda. In a medium bowl, whisk together the grapeseed oil, agave nectar, and eggs. Stir the wet ingredients into almond flour mixture until thoroughly combined, then fold in the chocolate. Drop the batter in scant 1/4 cups (2 inches apart). Bake for 12-17 mins.
Hope all is well and that you're making time for some good nomming.
