With AP tests over, I got the chance to bake this weekend! It's nice to be back in the kitchen. I made my own variation of this: http://www.simplyrecipes.com/recipes/oatmeal_raisin_cookies/
Here's my version:
Ingredients
1 c. olive oil
3/4 or 1 c. brown sugar
2 eggs
1 tbsp vanilla
1 1/2 c. flour
1 tsp salt
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1 c. raisins
1/2 c. walnuts
3 c. rolled oats
Preheat to 350F. First mix the oil and sugar together till well-blended. Beat in eggs and vanilla.
In another bowl, mix the dry ingredients. Pour the flour mixture into the liquid. Then add raisins and walnuts. After those are well-incorporated, stir in the oats.
Place tablespoons of flattened dough on a cookie sheet and bake for 10-12 mins.
