Dear R,
This is something I made just last week for my mom's birthday along with that giant extravaganza of cream puffs (of which I am still currently polishing off because of all the extra cream!). These are actually really simple to make. The only thing is that the filling takes time to pump into the cupcakes. But if you're looking for something chocolatey, nutella is the way to go! I basically used this recipe: http://www.annies-eats.com/2008/07/18/vanilla-cupcakes/ and then piped in nutella by creating a small hole in the center of the top of the cupcake! You can also make frosting to cover up that hole but...turns out I'm not very good at making frosting so...
Hope you can find time to bake some yummy treats soon!
Thanks for the positive school vibes :)
Love,
J
