Happy May! With the craziness the end of the school year brings, I apologize for not being able to post for a while. But I just wanted to share a few recipes I tried out this past weekend for Mother's Day! They are super simple and they taste amazing. I actually kind of cheated on the pesto part because we bought pesto sauce in a jar but I actually have a recipe for homemade pesto and it looks super easy as well! For the chicken, I just bought boneless chicken breasts and seasoned those before putting them to sear in the pan.
I discovered that I absolutely love the freshness and simplicity of bruschetta. Even though it's just toasted bread and tomatoes you can actually add whatever kind of toppings you want but it tastes AMAZING I don't even know; sorry I'm fangirling now.

I actually meant to make a super easy chocolate mousse too but I was too tired after making this hehe. I will try it out and share later!
