Dear R,
FINALLY. It has been like almost 2 months since either of us have posted, so for this post, I am excited! It was great to have a mini reunion and see you (and I guess eat some pretty delicious cream puffs too!)

Anyway, after getting back, I've been unfortunately busy with summer school & summer homework. But today, I finally made some time to bake! So originally, I was flipping through a Bon Appetit magazine last weekend and I saw a recipe they had for blueberry hand pies. Unfortunately, I couldn't make them because of lack of ingredients BUT that gave me a new ingredient to think about. Blueberries! They are in so many things: pancakes, muffins, cobblers, cheesecakes, pies, etc. So I started looking up some potential recipes including blueberries. And this is one that I found! Blueberry crumb bars! Obviously, I would have to say the looks of mine are far from the recipe I used (wah don't judge). But I have a few adjustments I would make if I were to make them again! (which I totally would). I used a pan a bit too big so mine ended up much thinner and I also did not leave enough crumbs for the top layer (oops).
BUT. The best part is that even though these don't look that good, they taste really good. Surprisingly, they weren't that sweet even though the recipe I felt called for a lot of sugar. I think the lemon juice definitely balanced it out (or maybe the blueberries were just super sour, who know?) These are buttery delicious little squares of blueberry goodness. So hopefully if you ever have blueberries on hand and are craving something sweet, give these a try! http://smittenkitchen.com/blog/2008/07/blueberry-crumb-bars/
Miss you!
Love,
J
